Nee, het werkwoord 'ontbijten' is een samenstelling van 'bijten' ('to
bite') en 'ont-' ('beginnen te').

Andere voorbeelden van werkwoorden met dit voorvoegsel 'ont-' zijn
'ontbloten' ('to bare, to uncover'), 'ontbranden' ('to inflame, to
ignite'), 'ontdooien' ('to defrost'), 'ontvlammen' ('to inflame, to
ignite') and 'ontwaken' ('to wake up').

Dit is dus een ander 'ont-' dan het productieve, gelijkvormige
voorvoegsel met de betekenis 'het tegenovergestelde verrichten van
dat wat het grondwoord uitdrukt'. Dit zit bijvoorbeeld in 'ontdekken'
('to discover'), 'ontheiligen' ('to desecrate'), 'ontsieren' ('to
mar'). De productiviteit van dit 'ont-' blijkt uit nieuwvormingen als
'onthaasten' (letterlijk 'to de-haste', dus in andere woorden het
minder snel maken van de maatschappij of de dingen des levens).

Ik neem aan dat het substantief 'ontbijt' is afgeleid van het
werkwoord 'ontbijten'. Het normale substantief bij 'bijten' is
'beet'.
