In the UK, I have observed a growing consumption of a range of meats,
including venison, kangaroo, ostrich, various South African deer, other UK
game). It seems to have a range of drivers:
a) health - lower cholesterol / lower fat
b) health - avoidance of beef (due to fear of BSE)
c) migrants and their businesses (e.g. growing number of South African
butchers)
d) farming changes (ostrich farming in particular)
e) welfare/price - the price of free-range fowl/pigs has risen far quicker
than the price of game - with the result that on some days, I can buy
wildfowl more cheaply than chicken.
