Perhaps you should not be so swift to dismiss the crab-apple as a
significant tree (but this is only a vague recollection from reading
excavation reports - apples go in, pips come out! - but also finding of
'cores')
There was one find in ?Gloucester where significant numbers of pips were
found (not in a cess pit), and they surmised that cider was being made.
Crab-apples have very high pectin levels, which I imagine would be quite
useful.
The finds from anglo-scandinavian York show crab-apples being found in
association with elderberries, hazelnuts, and rye/oat bran, which suggests
to me as a cook something rather delicious. Especially because one can add
in cream and whisky, which won't show up in that particular bit of
archaeology - something like cranachan? Or a wild boar stew?
On place names: Appledore, Kent?
