Huitlacoche or Cuitlacoche

Could any of you scholars enlighten me on the proper spelling of this word,
and more importantly, what its etymology is?

BTW, I just tried it for the first time (canned, via Herdez, and at great
difficulty on the importation!) and its quite nice.
