I am no expert in Nahuatl, but I think I can help you.  When I was little my
grandfather would take me with him to work in his empty house lot.  One of the
things we did was to cut the tall grass, which he referred to as "zacate."  I
have heard the word cuilote before I think, but I don't know what it is.  My
grandmother says it's probably bamboo.  I think he made a little chante or
jacal with daub and wattle walls, except with no daub, and the thatch was
zacate (tall grasses).  Sorry I can't help more.
