In Ruben Cobos, A dictionary of New Mexico and Southern Colorado Spanish 
(2003), I find:  cucuy m. [fr. Mex. Sp. coco, bogeyman, and !Uy!, an expression 
denoting fright] bogeyman.
The etymology seems fanciful to me.
