I think we are on the same page here.  When you are doing a transcription, you are deliberately doing what is actually signed.  When you are writing a book, you have the opportunity to change the presentation to some "ideal" form.  When you are doing a film of signed speech, and out-take may be a whole sentence, not just a word in isolation.  I'd expect that.

We're just not at that stage yet.

For a story, for myself, I'd try to get the best possible example of a sign from that signer.  You
 wouldn't publish a movie without out-takes, consider it a movie that has been perfected.
