Hi Jessie,
I have an article about SignWriting under review at an academic
journal - perhaps it will make it through the review process in time
to be something you can cite as "in press". I also want to note that I
use SSW for a transcript in a web supplement to an academic article
(Metasemiotic Regimentation in the Standardization of Nepali Sign
Language, The Journal of Linguistic Anthropology 18:2, 2008). Finally,
there is some discussion of SSW in my Ph.D. dissertation
(Standardization Beyond Form: Ideologies, Institutions, and the
Semiotics of Nepali Sign Language, 2008). Joe Martin has very good
discussions of SSW in his B.A. and M.A. thesis  - Cecilia Flood as
well - it is quite common to cite dissertations and theses in academic
work, so perhaps they will suit the needs of your class.
SSW also gets brief mention in several published works - one that
comes to mind offhand is "Signs of Their Times" by Senghas and
Monaghan in the Annual Review of Anthropology.
