To answer your first question, about the sign id00007. The sign needs to have a Right Arrow and a Left Arrow. It is incorrect to write a General Arrow, that is neither right nor left. Why? Because the General Arrow does not represent "both hands". The General Arrow represents "overlapping movement paths". There is a clear explanation of Overlapping Paths in the book: "SignWriting Basic Instruction Manual" which can be downloaded here:

Here is a screen capture of the explanation attached. In the sign id0007, the movements of the two hands do not overlap each other…they paint two separate right and left movement paths…
