It may not be in the OED, but it's in MW 10th Collegiate (p. 641) listed
as above, fr. Arabic kubbuh [though this is probably regionally different
in pronunciation], noted as attested from 1937, and defined as "A Near
Eastern dish of ground lamb and bulgur that may be eaten cooked or raw."

It would be interesting if Snake could provide some documentation of the
different spellings for the OED's benefit.
