Dear linguists,

our colleague Maximiljana Barančić from Zadar, Croatia, sends us two original
Arbanasi recipes written in this particular Albanian dialect (ca. 4,000 people
in the Zadar suburbs).

Recipe 1: Artichokes with Peas

Arti'qôkat me bîzha 
(për 4)

8 arti'qôka
sôku i li'mûnit
4 lûg me prêzla
100 ml 'vòj të u'llîjave 
4 fêta të ûdrave
petr'sîmuni
kryp
500 g me bîzha 

Drîlli arti'qôkat, îqi ǧesët të fôrt, prêi shta'gûcat të fôrta e krôjt të
m'brêt.
Pak mbôj arti'qôkat në  uj të mlàko me krüp e në qish e ki shti sôkun të
li'mûnit. 
Si me bô të për'zîem: me 'shtî petr'sîmunin të prêum e ûdrën, 'pâprin e
krypën, e ǧi me mish'jât bâshk mîr.
Mî shtrî ǧêsët të arti'qôkave e me shtî brênda të për'zîem. Mi shtî 'bîzhat në
têq e arti'qôkat ash'tù se jân me krüje nâlt. Per'mît sish me dêrd vôjn, me
shtî pak kryp e me dêrd uj të n'grît për'mît sish, ash'tù se jan të m'blûom ǧi
der nàlt. 
Zie në zjàrm të 'vôgël ni ûr. Kûr ǧi 'làng kô vôt, shtjêri pak 'vòj, nek dôsh.
Atà müsh me lân me angër kur ësht të gôtit, òll të n'grît.

Arti'qôkat mùsh mi bô e me bâs.
Ği bâshk düjen 1 ûr e 30 mi'nûta 

Artichokes with Peas 
(for 4 persons)

8 artichokes
lemon juice
4 tablespoons bread crumbs
100 ml /4 fl oz olive oil
4 cloves garlic
parsley
salt
500 g / 1 lb peas 

Clean the artichokes, removing the tough leaves, cut off the hard stalks and
the sharp leaf tops.
Briefly keep the artichokes in tepid salted water to which you have added
lemon juice.
How to make the stuffing: add the chopped parsley and garlic, pepper and salt,
and all mix well. 
Spread the artichoke leaves and put the mixture between them. Put the peas in
a saucepan and arrange the artichokes on top, heads up. Pour oil over them,
season with a little salt and pour cold water over them so they are covered
almost to the top.
Cook over a low heat for about one hour. When most of the liquid evaporates,
add a little more oil, if wished.

They can be eaten immediately or cold.
The artichokes may be prepared with young broad-beans.
Preparation and cooking time: about 1 hour and 30 minutes

Recipe 2: Snails

Kara'kôqat në lêsho
100 kara'kôqa
kryp
1 môll
dy tre ǧes të lôrit
vòj
ûsul
pâpër
krèn

Kara'kôqat drîllen 2 jâv. Masan'dèn 'lôen në ùj të n'grît. Zîen në ùj me kryp
ni ûr me dy tre ǧes të lôrit e ni môll. Kur jan të gôtit atà îqen pe ùjt. Në
ôn bëet shûgu me pak vòj, ûsul, kryp, pâpër e krèn.
Ğìsli kara'kòq îqet pe zhgôle e sht'jêret në shûg. 

Ği bâshk dyjen 1 ûr e 30 mi'nûta për mi bô.

A dish with snails
100 snails
salt
an apple
two or three bay leaves
oil
vinegar
pepper
horseradish

Snails are first cleaned for 2 weeks. Then they are washed in cold water. They
are cooked in salt water for an hour in which you put two or three bay leaves
and an apple. When they are cooked you remove them from their shells. On the
side you prepare sauce with a little oil, vinegar, salt, pepper and
horseradish.
Each snail is removed from its shell and dipped into the sauce. 

Preparing and cooking time altogether 1 hour and 30 minutes.
