I agree with Tom McRae that it is not surprising that an East End fishmonger
would recognise an Australian accent as different from his own. This might
surprise North Americans. Hollywood films often use an Australian accent to
portray an English one.

"Haitch" is a very respectable Irish pronunciation.

In London people sometimes say "Kate and Sidney" for "steak and kidney", but
this isn't "proper" rhyming slang because the rhyming element ought to be
omitted.
