I would expect a dutch influence because there were many dutch engineers (if
you want to call them that way) drying up the wet marshes. It's dutch
technology. Is gathering new ground from the sea typical for the west coast
of Schleswig-Holstein only? I would expect it for Lower Saxony as well. Does
anybody know?

The technology must have been widespread, as are names with _-koog_ along
the North Sea coast (as Niels pointed out).  However, it is apparently only
in some Holstein dialects of Lowlands Saxon (Low German) that _Koog_ is
still used as a noun (apart from occurring in names).
