So according to

there's a difference between Aalsupp/eel soup and Suursupp/sour soup with 
pork. Makes sense to me, as there is now a differentiation, which I think is 
a typical feature, when rural traditions mingle in a town like Hamburg. So 
I'm certain, that originally every cook had it's own version of Aalsupp and 
probably there are yet other versions and names, depending on what kind of 
food, especially meat is added.
