Further on the potato these ...

When I was a child my mother made two types of potato pancakes:

   - "Raw": Raw potatoes and onions are *finely* grated (unlike in the cases
   of *Rösti *and *latkes*), mixed with egg, salt and just enough flour to
   keep them together. They are formed into pancakes and then skillet-fried in
   oil until fully cooked inside and crispy on the outside.
   - "Cooked": Previously boiled potatoes are mashed, mixed with egg, salt,
   a good pinch of nutmeg and just enough flour to keep them together. They are
   formed into pancakes, then lightly dusted with flour and skillet-fried in a
   mixture of oil and butter until crispy on the outside.

The latke party last night (the first night of Hanukkah as well as Sabbath
Eve) was a large and wonderful affair. Almost 2000 *large *latkes were
cooked, and there were several enormous bowls of vegetable salad and fruit
salad, not to mention equally large bowls full of applesauce and sour cream.
There was a lot of music and children's activities. Hanukkah is, technically
speaking, a minor Jewish holiday based an an historical event. But in
America, in Britain and also in 19th- and early-20th-century Germany (in the
wake of Jewish assimilation and the establishment of Progressive Judaism*)
it came to be developed into a big deal, mostly to give Jewish children
their own festival of lights, fun and gifts.

* [The Reform Jewish movement was kicked off in earnest at the Bevis Marks
Synagogue in London (built 1701) and the New Temple in Hamburg (built 1818).
It really took off with large-scale European immigration to North America at
the turn of the 19th to the 20th centuries.]
