A querent enquired..
> How does a chip shop type deep fryer differ from the commercial deep
fryers
> that they already use?
I responded...

Words cannot describe those masterpieces of culinary artistry.
Enormous units encased in stainless steel with 3-4 deep frying units plus a
draining cage from which food is transferred to a frontal shelf for final
draining and packaging. Plus a cute chip holder with perforated base and
pull down lid into which the crisp, golden brown masterpieces are
transferred
Generally of Italian construction they have a high front behind the friers
which is frequently emblazoned
with artwork such as a view of Sorrento. In England the frying units are
grossly inferior, one must visit Scotland for the real McCoy.
Alas chip shops and attendant artwork are fast being replaced with Vindaloo
takeaways and Macca abominations.
Soon the ancient Scottish custom of entering such an establishment around
10.30 pm, asking "Any chips left" then receiving an affirmative
yelling "Serves Ye right fur makin' too many !" as you run out into the cold
night air. will be history
