A couple of general sources about rhymes and word games as a kind of oral tradition passed from one generation of children to another: I believe there's a relevant short chapter in Ronald Macaulay's 1994 OUP book _The Social Art: Language and its Uses._, and in Peter Reich's book Language Development.
