"She try and be quiet" is possible in the context of a habitual event, such
as "Every time mama come[] in the room, she try and be quiet."   "She trying
to be quiet [because mama is in the room],"  however, would not occur in such
a context, since it implies a specific occurrence in the immediate present.
In order to know which the informant meant, I'd have to know the context.
