On both the long & short census forms, there is a question asking if the
person is Spanish/Hispanic/Latino, then requesting further breakdowns
for those categories [4 options, including 'other Spanish....']

There is also a question asking about a person's race, with the basic
options as noted by Andrea, including 'Some other race'.

On the long form only, question 10 asks "What is this person's ancestry
or ethnic origin?', with space provided for several listings.  Question
11 asks 'Does this person speak a language other than English at home?',
if Yes, 'What is this language?', then a 4-item scale is provided for a
response to 'How well does this person speak English?'

The short form has 6 personal questions, including the person's name.
The long form has 32 personal questions, including the person's name.
