Momo (Nepal/Tibet dumplings); Sole Marguery

Marguery was a famous 19th century chef in Paris, and he gave his name to a sauce that can be served with filets de sole, with trout, salmon or other kinds of fish.
There are still restaurants both in Paris and New York bearing his name.
