The thread so-far has been circling the motif of the kind of meat used to
make sausages. Speculations about what kind of meat goes into sausages or
things like Mrs. Whatshername from _Sweeney Todd_'s meat pies, are probably
as old as commercial cookery itself.
Similarly, an otherwise unpalatable or difficult-to-cook meat can be
satisfactorily processed into sausage. Sausage would seem to have always had
some less-than-usual ingredients, even dog meat.
