OED has 1931 for "meat substitute." This is the revised OED. Seemingly everyone should know that "meat substitutes" were used during World War I, at least.
There are two earlier BROOKLYN EAGLE hits (1870s and 1880s), but the system has been changed a little and I didn't see them.
OT: I recently e-mailed the American Antiquarian Society about their digitization of pre-1800 work. (I'm looking for a good bakery.) I got no response, but will forward one when/if one arrives.
