Jarlsberg cheese (1966)

   "Jarlsberg" cheese is not in OED (NO!  IT CAN'T BE!)  and not in
Merriam-Webster.  I have two cheese books by Andre L. Simon (London, 1930s
and 1940s), and it's not in either one of them.  I'm away from the NEW YORK
TIMES database right now.
   It's in just about every supermarket, but here's a web definition:

Jarlsberg cheese is a Norwegian Emmentaler type cows milk cheese with large
holes, a rich buttery texture and mild, sweet nutty flavor. It has a slightly
lower fat content than Swiss cheese, and melts easily.

   Price rarely has anything to do with the status of a cheese. Swiss
Emmenthaler can retail for anywhere between $4.99 and $7.99lb depending where
you live.Jarlsberg costs about the same. Jarlsberg is a very recent cheese in
the long scheme of things. It was made originally as a copy of the Swiss
Emmenthaler and only became popular because of its availability in US
supermarkets. Considering its smaller size (about 16pounds/wheel) compared to
a real Emmenthaler at over 200 pounds... you can see why its popularity rose
among cheese retailers. It is also a much milder and sweeter cheese than its
Swiss cousin because it is made from pasteurized milkand is aged a relatively
short time. In contrast, Emmenthaler from Switzerlandand France is always
made from raw milk and can be aged for quite a long time.Jarlsberg is a
boring mass produced factory cheese designed for the American pallette. If
you want the real thing.. get Swiss or French Emmenthaler cut from the "big
