I tried my best to save a trip up to Madison by just asking.

We do have an index, but unfortunately only back to 1987. We've been in
business since 1876, and every issue of our paper is available at the
Wisconsin State Historical Society here in Madison. Here at our office we
have issues dating back to 1928. I do know that Colby was invented in 1885 in
Colby, WI, and in fact I once stumbled across a story on Colby's invention.
The story ran in the November 10, 1939 edition of the Cheese Reporter, and
was based on an interview with J. F. Steinwand of Colby, WI, who along with
his father invented the variety. That 1939 article mentioned also that
another factory in that area began making Colby in 1887, so I would guess our
paper started mentioning this variety sometime before the 20th century began.
Brick cheese is another Wisconsin invention, and also dates to the 1800s, I
believe. I don't have the detailed information for it that I have for Colby,
so my guess is that it was also first mentioned in our paper back in the late
1800s.
Hope this helps.
