I've never heard it. I can't find an instance right away.

DARE shows "posthole owl" meaning a burrowing owl.

Apparently there are several "burrowing toads" native to Texas; conceivably
"posthole toad" is used rarely or locally for one (or more) of these.

Then again, maybe the reference is to a toad turned up while digging a
posthole, or something like that.
