mole poblan'

I like the suggestion about chicken sex, but mole is also served with pork, 
turkey, and even raccoon. It seems more likely that mole poblano is aggressive 
and solid-colored, whereas mole poblana is gentler and comes in shades of 
colors like taupe and mauve.
