Are those two possibilities exclusive? I've always thought that at least on the ground joyrides allow for the possibility of abandoning the vehicle in some field or whatever--the key is that it's distinguished from car theft by virtue of the intent and the final result--the "borrowers" neither plan on keeping the car nor do so, but they don't need to return it to its starting point. Maybe it's different for planes.
Here's the OED's gloss; no mention of landing site in either case:
'A pleasure trip in a motor car, aeroplane, etc., often without the permission of the owner of the vehicle.'
