I can recommend the Language Centre at University of
Jordan in Amman. They offer Arabic for non native
speakers at various levels.
Our Year Abroad students from the Department of Middle
Eastern Studies spent their one academic year there
and i had positive response.

Of course, there is the Language Center at the University of Jordan. The
British Council also runs courses in Arabic as a Foreign language.

In addition to what you might find from the University programs, I believe
George Kelsey still has an arabic language program in Amman. He is a Baptist
(?) minister & the program is heavy in evangelic focus (or it was 25 years
ago, perhaps it's changed); but the program is/was excellent. (and very
inexpensive).

o Jordan University in Amman
or
o one of the community colleges (recent development) in or around Amman
There are several programs for foreigners to learn Arabic (mostly "social
Arabic" and the "get-along and get around" level) offered in Amman.
Yarmouk U is too much of a commute, and the Arabic-for-foreign-students
program there may be offered only during the summer (i.e. the joint program
with U of Virginia at Charlottesville).
Hope this helps.
BTW, anyone interested in familiarization courses in Gulf Arabic offered in
the UAE can contact me for particulars. (Mixed male-female classes are OK.)
If anyone wants familiarization or refresher courses in regional dialects
of Arabic (i.e., Libyan, Maghrebi, Gulf, elsewhere), there are some
short-term (2-/4-/6-wek) programs available and customizable by a language
services firm in southern California.
