The spelling is historical.  Portuguese reduces unstressed /o/ to
/u/ (in Brazilian Port. this applies only to posttonic final
position -o > /u/, in Portugal to all unstressed /o/'s, except
absolute initial o-, some learned words, and cases where /o/
derives from oo < *ono, olC, ou).
