Abstract
How do we talk about new foods? What language is used to describe,
critique, promote, and ultimately conceptualize novel foods? To
explore how we talk about novel foods, this panel draws on various
linguistic theories to analyze the discursive strategies used to
describe, critique, promote, and conceptualize novel foods. For
instance, speech act theory helps to examine how language is used
performatively to endorse or reject new food items. Discourse analysis
is employed to investigate how power relations and social norms are
embedded in the ways novel foods are framed within different cultural
contexts. For example, foods like insects might shift categories of
edibility based on cultural discourse, while foods with synthetic
color additives or cultivated meat, products of technological
innovation, require new linguistic and conceptual categories.
Additionally, the theory of semantic change is relevant in
understanding how the meanings of terms evolve as new foods like
microalgae (e.g., spirulina) or previously unfamiliar ingredients like
acai berries, chia seeds, and chocolate are incorporated into everyday
language and thought. By applying these linguistic frameworks, this
panel focuses on how language not only reflects but also actively
shapes our understanding and acceptance of novel foods, revealing the
cultural, political, and social dynamics at play. Ultimately, the
panel highlights the role of language in constructing food-related
realities, including the ways we communicate ideas, values, and
identities through our dietary choices.

- Examine the discourse delineating novel foods vs traditional foods
- Identify how language is used in the branding and legalization of
heritage foods
- Explore language constructs around terroir and authenticity
- Relate media texts reporting on novel foods to broader audience
understanding
- Identify sociocultural understanding of edibility, eliteness, and
distinction
- Take a historical linguistic approach and examine how a novel food
has become normalized (e.g., chocolate, milk, acai berries)
- All theoretical and methodological approaches are welcome to this
panel.
