A "bayou" is one of those Louisiana marshes.

A "pirogue" is a boat designed for fishing in these marshes - it's
flat-bottomed and lies low on the water.

Of course the pole is for steering and pushing the boat. So the chap is
saying that he's going to pole his way down the bayou in a pirogue to get to
the fais do do  ;)
