It might be more traceable, if you concider the germanic source of the term:
The most Saxon, Germanic based appellation for latine *cavallus* had been:
*hrussa-, *hrussam
which might have been pronounced like [ɦɘrʊssa…] or [χɘrʊssa…], which could
also aurally easily lead to
*hursa-, *hursam, Germ. (already the metathesis of the 'r'),
to come out into:
hros, Old Saxon, O.Fris. hors, O.E. hors
hros-s, Old Norsk (with many other appellations)
hros, O. H. G. and to:
ors (sometimes: ros), M. Low G.
ors, Middel Dutch, ros, M. H. G., and finally to:
modern
LS (at least Westphalian) *ors/ros*, , NL *ros*, EN *horse*.
I wonder if such kind of older Germanic spelling/prononciation could also be
applied for other examples of the r-metathesis.
