In the UK  ( or is it just England?) Mothering Sunday was the Sunday
before Palm Sunday i.e. 2 Sundays before Easter.
Servant girls and female apprentices were allowed home in order to take to
their mothers the traditional ingredients for the Easter cake: eggs, flour,
sugar, saffron  and almond paste ( with or withour dried fruit)

All of these would have been banned during Lent.

Mothers used the ingredients to make the Simnel Cake for Easter Sunday - a
saffron cake decorated with 11 marzipan eggs ( one for each
disciple/apostle) and one larger one in the middle to represent Christ.
