That's the turnips, right? They were the easiest, with the tatties and the
cloves. I think most shop-owners will look at me with glazed eyes when I ask
them: "Ik wil graag een haggis. Doe maar een haggis van een kilo." ("I'd
like a haggis. Make it one kilo").
No, I don't like buying ready-made things. I love self-made dishes
(according to ancient or otherwise well-tested recipes), or things
prepared in small numbers. I think 50% of the enjoyment I get from cookery
is the preparation while you see the dish come into being when you imitate
what previous generations have developed. All the good smells, the work,
the tasting, the odd ways of preparation, etc.

Dag Elsie! Jinne, daardie afval moes baie lank stadig prut. Ek kon die pens
gelukkig klaargeskrop by die slagter kry. Die Hollanders ken hierdie pens &
pootjies-geregte nie, maar blykbaar ken hulle dit wel in Marokko. Dus ek het
beespens en twee beespote by die Marokkaanse slagter in Leiden gekoop. Die
hele vaalgoed was mooi wit en skoongeskrop. Maar darem, die pens se misgeur
was so oorheersend, hoewel ek dit goed afgewater het. Maar ná 12 ure prut
was alles murgsag. Dit is 'n kerriebeesafval.

Watse afval het jou ouma gemaak? Ek het gelees dat hierdie pens &
pootjies-afval deur die Hugenote na die Kaap gebring was.
