"borger" = borrower? surety/guarantor?

 Nope...borger = modern Dutch "burger" = English "burgher" = citizen

"ontstolen" = stolen (from)? alienated/seized/taken away (from)?

Ok dog ek:

"overgedaen" = conveyed?

Yep.

"ende" - Is this the stressed/emphasized form of "en" (like "ikke" for
"ik")??

 "Ende" was the common form of modern "en" until a couple of centuries
ago...it can still be heard in fossilized expressions like "over-end-weer",
"rom-end-om"..., resp. "to-and-fro", "upside down"...)

Borger is modern Dutch burger, i.e. citizen. For the rest, you're right, I
think your translation is fine. I'm sure you can understand Modern Dutch a
lot better, but this 17th century Dutch text is really unreadable to most
Dutch people as well!
"Ende" and "ofte" are older forms of "en" (and) and "of" (or).

Ek skryf liewer hier op die lys.
Jawel, ek kon lees wat jy geskryf het, maar die probleem is dat ek nie
Nederlands praat nie (alhoewel ek dit omtrent 15 jaar gelede probeer leer).
Daar is nog 'n paar woorde in daai stukkie wat ek nie verstaan nie (en ek
hul nie in van Dale se woordeboek gevind nie):

"borger" = borrower? surety/guarantor?

Does the whole piece read this way?:

"... whereupon,  thereafter, conveyed/gave the same [=them] to borrower (or
"surety"?) JCV again, and that in the same manner, upon being informed by
LvB, that the same sheets were stolen/taken away from him, has restituted
[them] to the confessant."
