bethany dumas: The best po boy is one that contains fried oysters.

i was wondering when someone would mention this.  in my opinion,
the fried oyster variety is the apotheosis of the po boy, the
height towards which all other po boys are striving.

arnold (zwicky at csli.stanford.edu), who finds the spelling "poor
  boy" bizarre, and who had a surprisingly good french/californian
  cousin of the fried oyster po boy for lunch today in palo alto
