If you want chat that includes meaningful interactions, I think you have to actually be recording someone truly participating in the game, preferably someone in a functional guild.

Use free Trial accounts to stand around in Orgrimmar and/or Stormwind and log the trade chat by enabling /chatlog ( see http://www.wowwiki.com/MACRO_chatlog ).
