About the Malay / Indonesian taste term "pahit":

Well I don't know ... I may be a native speaker of English, but I've never
heard of 'puckery'; and as for 'astringent', for me it's one of those
words that I know exist, but I'm still a little vague as to what it
actually refers to.  Whereas 'pahit' is a high-frequency term in Malay /
Indonesian.
