Some suggestions passed on to me by  Professor R.W.Davies:

I suppose John Scott's Behind the Urals is not really literary, but it
is a good account of 'what the industrial economy is really like'. As
for novels, I find Dudintsev's Not by Bread Alone as good as any, and on
the countryside she could try (for late Stalinism) V Ovechkin Raionnye
budni, part of which was translated in Soviet Studies in 1953-4
